Food Preparation and Culinary Arts (Level 1)

Aim:
The course is intended to provide deep knowledge on the use of equipment in a professional kitchen and correct food preparation. The course will be held once a week (6 hour session) for 28 weeks. The sessions will be divided in 1.5 hours Theory followed by 4.5 hours Practical. This course leads to the City and Guilds of London Institute Exam.
Description:
• Safety at work
• Wear appropriate protective clothing and use equipment and utensils safely
• Carry out simple first aid procedures
• Food Safety at Work
• Maintain personal cleanliness and hygiene; carry out routine cleaning whilst at work
• Food Preparation Methods
• Use knives and small utensils appropriately
• Operate food preparation and storage equipment efficiently
• Cost Control Operations
• Identify and list commodity prices for a recipe or total meal; Compare alternative commodities in terms of price and quality
• Calculate cost of recipes; individual dishes; and simple set menus
• Storage and care of materials
• Nutrition at Work
• Cooking methods
• Boiling; poaching; stewing; steaming; braising; deep frying; shallow frying; baking; roasting; grilling; microwave cooking;
• Cold food preparations
• Basic Pastry Techniques
Clients can choose to sit for the City and Guilds of London Institute Examination.

Requirements:
Persons aged 16 years and over, with at least a secondary level of education. Clients may be subject to a pre-course evaluation. Clients must also be in possession of Food Handling Cat B.
